I grew up in Galway and got my first job in retail at 16. By my mid-twenties I was one of the youngest SuperValu managers in Ireland. Then a decade with Musgrave Retail Partners, overseeing 26 businesses with a combined turnover of over €70 million.
In 2011 — right in the depths of the recession — I took Mountain Top in Letterkenny from receivership. I transformed a loss-making restaurant into one of the most famous diners in the North West — Kelly's Diner — alongside a thriving Centra and petrol forecourt. I built the business over 13 years, then sold it successfully having positioned it correctly to maximise the outcome.
